When should you start grafting trees?ANSWER:
Generally, grafting is best done in the spring. You didn't mention the type of trees you are interested in grafting, so I'm including a link to University of Minnesota Extension that covers fruit trees, and one to Aggie-Horticulture that covers pecan trees.
