Speaker Presentation: Foraging Texas – ONLINE

Explore the world of native edible plants with local foraging duo Eric Knight and Stacy Coplin, as they make their debut introducing their new book, “Foraging Texas: Finding, Identifying and Preparing Edible Wild Foods in Texas.” These local Austinites met in 2011 as instructors at the Austin Nature & Science Center. After falling in love with one another the two merged their passions to create Local Leaf, a Yaupon tea company in 2016. Since then the pair have enjoyed traveling and exploring nature’s bounty while sharing their mission: using food to inspire environmental awareness and instill stronger connections to the natural world. With this book, Eric and Stacy hope to inspire others to make ethical, sustainable wild-harvesting common knowledge and part of their everyday life.

Listen in to this special online presentation as Eric and Stacy share their experiences while writing this book and give their best tips for finding, preparing and using foraged foods. This presentation will also include a cooking demonstration by Stacy using one of her many recipes.

Eric Knight was raised as a naturalist in Austin and has taught classes on edible and useful plants at the Austin Nature & Science Center and Earth Native Wilderness School. He studied herbalism at the Wildflower School of Botanical Medicine. He is co-founder and owner at Local Leaf where he wild-harvests, brews and bottles yaupon tea.
